Jamun honey mainly comes from two sources. The first one is Apis Mellifera (Apiary Honey) and Apis Dorsata (Wild Honey). The difference between the two is that Apis Mellifera is more shiny and has transparency with less pollen count. The Apis Dorsata or Wild Forest Honey is More turbid with a high bee pollen count. 

How bees collect nectar from jamun blossoms to produce honey

Worker bees, which are the female bees responsible for collecting nectar, set out from the beehive in search of food sources. They typically travel up to several miles to find flowers that are rich in nectar. Bees are attracted to flowers through visual cues, such as colour and shape, as well as scent. Jamun blossoms, also known as Indian blackberries or java plums, produce fragrant and nectar-rich flowers that attract bees.

Once the bees find a suitable jamun blossom, they insert the flower to access the nectar.  The nectar is a sweet liquid produced by the flowers as a reward for the bees pollination  services. The bee stores the collected nectar in their special stomach called “stomach sac”.  After loading the nectar, the bee returns to the beehive to offload the collected nectar and the house bees receive the nectar from the forager bees. After that, house bees processed the nectar into honeycomb cells. In this process, evaporation removes excess water from the nectar, which transforms it into a thicker syrup known as honey. 

This is the basic process of bees collecting the nectar from honey but it might be different depending on the bees species and enviornment and different flowers also produce nectar with varying sugar content, which can affect the honey’s taste and characteristics.
